Basil Chicken

Chicken Basil: Cook chicken with one can of chicken broth in covered skillet for 45 minutes until tender. Once the chicken broth has reduced, add olive oil and butter to chicken until lightly golden brown. Afterwards, sprinkle with salt, pepper and a generous amount of basil to taste. Remove from skillet and cut chicken at a diagonal. Place chicken on top of Alfredo sauce and Cooked Angel Hair Pasta (or Fettuccine). Sprinkle with extra Parmesan cheese.


4 Chicken Breast
1 Can Chicken Broth
1 Tablespoon Olive Oil
1 Tablespoon Butter
Salt
Pepper
Basil
Parmesan Cheese
 
Alfredo Sauce: Melt butter in sauce pan on low temperature. Add flour and stir continuously until the rue bubbles. Continue for an additional minute and then add cream slowing while stirring. Once sauce thickens add shredded Parmesan cheese.

1 Stick of Butter
1/3Cup Flour
2 1/2 Cups Cream
8 ounces of Parmesan Cheese*

Angel Hair Pasta: Cook as per package directions

* Any five or six white cheese blends (usually Mozzarella and Provolone, Parmesan, Fontina, Romano and Asiago) can be substituted for the Parmesan Cheese in this recipe. 

Note: Great Entree to serve with or top off with sauteed fresh mushrooms and or any steamed vegetables like broccoli and zucchini.
